Day 1 Recipe Week: White Chocolate Chip Macadamia Nut Cookies

I thought I'd start off recipe week with a dessert! I found these cookies online one day when I was craving the White Chocolate Macadamia Nut Cookies from Subway. I thought they turned out pretty good.

White Chocolate Chip Macadamia Nut Cookies
1 cup butter, softened
1 1/2 cups sugar
2 eggs
2 tsp. vanilla extract
2 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
10 oz. white chocolate chips
5 oz. chopped macadamia nuts

Directions:
Preheat oven to 375*

In a medium bowl, cream together the butter and sugar. Stir in the egg and vanilla. Combine the flour, baking soda and salt. Stir into the creamed mixture. Finally, stir in the white chocolate chips and the macadamia nuts. Drop cookies by heaping teaspoonfuls onto ungreased cookie sheet, about 2 inches apart.

Bake for 8-10 minutes until lightly browned. Cool on wire racks. When cool, store in an airtight container (I always store with a piece of bread. This helps keep cookies moist).
